  • Ingredients (serves 4):
    4 large or 16 small white mushrooms
    2 bell peppers, red and yellow
    1 zucchini
    1 onion
    4 tbsp. olive oil
    1 tbsp. lemon juice
    1 clove garlic
    Fresh herbs (rosemary, oregano, thyme, sage)
    Salt, ground white pepper
Instructions:
1. Rinse and peel white mushrooms, divide them into four parts if they are large or leave whole if they are small.
2. Rinse bell peppers, cut them into halves, remove the seeds and cut into pieces.
3. Peel the onion and cut it into wedges.
4. Rinse the zucchini, cut off both ends and cut it into thick slices.
5. Put the thus-prepared vegetables into a bowl, drizzle oil and lemon juice on them, add chopped herbs and pressed garlic and leave to marinate for at least 15 minutes.
6. Thread the white mushrooms and vegetables alternately on wooden or metal skewers.
7. Fry the skewered vegetables on a heated frying pan for 8 to 10 minutes on all sides.
8. Serve the fried skewered vegetables garnished with chopped parsley leaves and a wedge of lettuce. Goes very well with grilled bread.
