Instructions:
1. Mix cream
with sugar, boil on low heat for approx. 3 minutes and remove from heat.
2.
Zest rinsed lemon peel into a bowl, add lemon juice, blend everything well with
cream and leave to rest for 20 minutes.
3. Strain the lemon curd into cups and
leave to set for 2 to 3 hours in a cool place.
4. Garnish with peppermint
leaves and waffle or biscotti and serve.
