Grilled aubergine with mozzarella and basil oil

  • Ingredients (serves 4):

    400 g aubergine (approx. 2)
    250 g mozzarella
    100 g tomatoes (approx. 1)
    20 g (1 tbsp.) pine nuts
    2 tbsp. basil
    1 dl olive oil
    1 tbsp. parsley leaves

Instructions:

1. Cut the aubergine longitudinally into 8 slices and brush with olive oil on both sides. Cut tomato into slices and mozzarella into 4 slices.
2. Grill the aubergine on one side, add salt and pepper and put aside.
3. Make a cross pattern of two pieces of aubergine, with the grilled side up. Add a slice of cheese, a slice of tomato and a basil leaf. Make a nice wrap of all these ingredients (you can join them using a moistened skewer).
4. Grill the wrapped aubergine for 3 minutes on each side.
5. Serve with lettuce, garnish with a slice of tomato and with basil and sprinkle with pine nuts. Pour basil oil on top and serve with bread.

Basil oil:
Briefly mix cleaned parsley and basil with olive oil using a mixer and season with salt and pepper.
